Amritsari Wari Traditional Sindhi veg cooked during weddingday-Urad-Dal


Ingredients


  1. 2 amritsari urad dal waris
  2. 2 brinjals cut into big cubes
  3. 2 potatoes cut into big cubes
  4. 2 big cubes of bottle gourd(lauki)
  5. 2 onions finely chopped
  6. 3 tomatoes grinded
  7. 4 tbsp oil
  8. 1 tbsp finely chopped corridor leaves
  9. 1 tsp ginger,garlic paste
  10. 1/4 tsp haldi
  11. 1/4 tsp red chilli pd
  12. 1/4 tsp dhania pd
  13. 1/4 tsp garam masala pd
  14. salt

Steps

  1. Heat oil pressure cooker.
     
     
  2. Fry amritsari waris till golden on both sides.
     
     
  3. Remove and keep it aside.
     
     
  4. In the same oil saute onions till transparent.
     
     
  5. Add potatoes, bottle gourd, brinjals,mix and saute for 5mins.
     
     
  6. Add grinded tomatoes,salt,all dry masalas and saute for 10mins.
     
     
  7. Add waris,mix and saute for more 5mins.
     
     
  8. Add enough water to soak the veggies.
     
     
  9. Close the lid and pressure cook for 2whistles.
     
     
  10. Allow it to cool completely.
     
     
  11. Open the lid,check the consistency.
     
     
  12. If to thick add little water, adjust the taste and cook for 5mins.
     
     
  13. Transfer in a serving dish.
     
     
  14. Garnish with corridor leaves.
     
     
  15. Serve hot with rice and phulkas.
